Doesn't this like normal chow fun noodles? It's not! This dish is made with House Foods Tofu Shirataki Noodles (Fettucine). Only 3g carbs and 20 calories per 4 oz. serving (1/2 a package)! The consistency is very similar to regular noodles, but a little more al dente. These noodles do best in stir-frys. You can find them in the tofu section at Safeway, for about $3.00 for an 8 oz. package. Using some leftover poached chicken (from this post), I made this low carb dish:

INGREDIENTS
1 8oz. package of Tofu Shirataki Fettucine Noodles, drained and rinsed well (add a dash of salt and rub into the noodles before rinsing to get rid of the slight odor)
1/2 of a yellow onion, sliced
1 carrot, julienned
1 garlic clove, minced
1/4 teaspoon ground ginger
1/4 teaspoon tumeric
1 teaspoon soy sauce
Juice of 1 lime
2 teaspoons vegetable oil
2 sprigs green onion, sliced at an angle
1/2 a cube of Japanese curry, such as S&B Hot Golden Curry
1 teaspoon Siracha hot sauce (optional)
1/2 cup shredded poached chicken (optional)
Cilantro (optional)
DIRECTIONS
In a bowl, mix lime juice and soy sauce
Heat vegetable oil on a non stick saute pan
Add onions and carrots, saute until soft
Add garlic, stir
Add noodles, stir
Add lime juice/soy sauce mixture and curry cube, stir well to mix (until cube has melted)
Add chicken, hot sauce (optional) and green onion
Stir well so noodles are evenly coated with sauce
Top with cilantro and additional fresh lime juice if desired
