Pie on Pi

π 3.14! Pi Day. Today also happens to be a birthday of someone special, so I made a classic Apple Crumb Pie to celebrate!
I cheated and used store bought crust (total time saver!). Apples, sugar, butter...there's nothing more comforting and American than a warm apple pie!

Filling
3 large Golden Delicious apples
3 large Granny Smith apples
Juice of 1 lemon
1/2 cup white sugar
3 tablespoons light brown sugar
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon allspice
1/4 teaspoon salt
1/4 cup flour
Premade or homemade pie crust, chilled

Put lemon juice in a large bowl. Peel, core and slice apples into 1/8" slices and place in bowl of lemon juice as you're slicing. Stir apples to coat with lemon juice so they don't brown. Add sugars and mix. Add cinnamon, nutmeg, allspice and mix. Sprinkle flour and mix until incorporated. Pour into crust.

Preheat oven to 375 degrees. Place pie on a baking sheet lined with foil to catch liquid boil-overs. Set aside.

Crumb Topping
1/4 cup butter, room temperature
1 cup sifted flour
1/4 teaspoon salt
1/2 cup brown sugar
Mix dry ingredients together in a bowl. Use hands to mix butter into flour until crumbly.

Put crumb topping over apples. Place pie into oven for 50 minutes. Cool on a rack before serving. Top with ice cream and you're in heaven :)
